Sweet Potato Fries

Yummy…sweet potato fries. Yucky…all that fat. Here’s a skinny version you can eat for breakfast (or lunch…or snack…) This makes about 16-20 yummy fries.

Per Recipe: 3 points. Totally core, too!

Ingredients:

I sweet potato

salt (to taste)

chili powder (for dusting)

nonstick spray (I use olive oil)

Directions: Cook the sweet potato until it is “al dente”–can use the potato setting on your microwave, or cut the potato in half (skin on) and boil about 10-15 minutes in water. Remove the skin and cut into “fries”–looking like short carrot sticks. Heat a nice, wide pan (I use a cast iron skillet, but any pan will do.) Spray with nonstick spray. When nice and hot, adjust the heat to medium-high and drop on the potatoes–they should touch as little as possible. Sprinkle with salt and chili powder. Brown on all sides (I leave them about 3 minutes before turning them. Serve with ketchup or steak sauce, if desired.
