I have a quiche recipe to share! It’s completely core and only 2pts per serving (1/8 pie)
TOTALLY CORE QUICHE
Crust: 1 cup polenta corn meal
1 cup water
1 t. salt
Filling: 2 eggs
1 cup ff cottage cheese
1/2 onion
2 cloves garlic
1 t. lemon juice (or vinegar)
1/2 t. pepper
1 t. salt (optional)
1/2 c. 0pt veggies, chopped (optional)
PREHEAT oven to 350
CRUST: Combine ingredients and either microwave 4 minutes on HIGH (stirring every 2 minutes) until it creates a paste or on the stovetop on medium heat stirring often. If the mixture is too crumbly seeming, add 1/4 c. more water and either microwave another 30 sec. or until blended on the stovetop. Should be a thick paste. Allow to cool slightly, pour into a pie pan sprayed w/ nonstick spray, and press evenly along the bottom and sides of the pan.
Filling: Pulse the onion and garlic in a food processor or blender until chopped. Add eggs, cottage cheese, salt, pepper, and lemon juice or vinegar and blend until smooth. Stir in chopped veggies. Pour into the polenta crust. Bake 30-35 minutes. Allow to cool 5 minutes before slicing.
